Oat coconut prune bars

I like to make this in place of muesli bars. They are substantial and packed full of energy. Perfect for those busy days when you need a snack you can simply grab from your bag, and keep moving.

Ingredients

  • ¾ cup rolled oats
  • 1 tablespoon chia seeds
  • Pinch of salt
  • 2 limes, zested
  • ¼ cup lime juice
  • 1 tablespoon honey
  • 1 ¼ cup milk (or milk alternative)
  • 1 ½ cup spelt flour
  • 1 ½ teaspoons baking powder
  • ½ cup wheat bran
  • ¾ cup thread coconut
  • ⅓ cup coconut sugar
  • ½ cup pumpkin seeds
  • 1 cup prunes (chopped)

Method

Turn your oven to 170 fan bake or 180 bake.

Place oats, chia seeds and salt into a bowl and give a quick stir.

In a small saucepan, whisk together lime zest and juice, honey and milk. Heat on a low temperature to warm, then pour this over the oat mixture. Leave to soak for 20 minutes.

Whilst you wait, add all remaining ingredients, except the prunes, into another bowl.

After your 20 minutes is up, add the wet ingredients to the dry, mix together, and lastly fold in the prunes.

Place into a loaf tin, it is a thick mixture and will require some smoothing out.  Top with a little extra coconut if you wish.

Bake for around 40 minutes or until golden.

Slice into 12 ‘bars’. Enjoy fresh or toasted with a little butter.
